Grapes: Chardonnay
Characteristics: Light and fresh wine. A nose of ripe fruit, pineapple, apple juice, but also with a well-asserted mineral characteristic on wet stone with notes of humus and a slightly milky aspect. On the palate, a very lively and fresh wine, all in minerality on superb saline and lemon notes, which, despite its good acidity, reveals a nice roundness.
Pairing: White fish tartare, clams
Aging: between 2 and 5 years
Alcohol: 12% Vol.
Cultivation: Organic farming since 2000. Soils: marine limestone
Vinification: Natural vinification, aging in vats for 6 months. Total SO2 <30mg/L
For the record: Gilles Azam bought his first vineyard in 2000, then patiently laid down each milestone of this 13-hectare estate.
