Grapes: Chardonnay and Chenin
 
Characteristics: The mineral and floral freshness (linden, acacia, lilac) of Chenin is balanced by the delicacy of Chardonnay on ripe fruit (roasted pineapple, lemon, quince and apricot) and pastry and buttery notes. A lively, greedy and straightforward wine. To decant 30min before serving to let all its complexity express itself.
 
Pairing: Prawns with herbs, exotic dishes.
 
Aging: between 2 and 5 years
 
Alcohol: 12.5% Vol.
 
Cultivation: Organic farming since 2000. Soils: clay and sandstone
 
Vinification: Natural vinification in demi-muids and aging for 12 months. Total SO2 > 30mg/L
 
For the record: Gilles Azam bought his first vineyard in 2000, then patiently laid down each milestone of this 13-hectare estate.
