Grapes: Chardonnay
Features : A very elegant wine whose bouquet opens with honeysuckle and white flowers before giving us more creamy and gourmet aromas of yellow melon. On the palate, the acidity and salinity bring a nice freshness that comes with a gourmet roundness on a complex aromatic blending notes of melon, lemon tartlet, parsley and butter.
Pairing : Moules marinières, tagliatelle with clams
Aging : Up to 3 years
Alcohol : 13.5% Vol.
Culture : The entire vineyard is cultivated organically and biodynamically. The clay-granitic plots are devoted to the cultivation of Chardonnay. Fertilization is done only with compost from their cattle breeding. The harvest is harvested manually, which allows us to refine the sorting and thus to vinify irreproachable grapes.
Vinification: The grapes are put in vats without sulphiting and the fermentation begins thanks to the native yeasts of the grape. Aging on lees for 6 to 8 months in vats
For the little story : Located in the town of Villemontais, the vineyard covers 21 Ha. As soon as he arrived in 2005, Romain refurbished the cellar, converted the vineyard to organic farming
