Winemakers: Romain Paire

Grapes: Gamay Saint-Romain

Features : A Gamay that is as complex as it is drinkable. The nose already opens on fruity indulgence with syrup notes of grenadine, currant and blackberry accompanied by fresh aromas of blue plum. The mouth does not lie the nostril since from the attack we find a little residual sugar coming to line the tip of the tongue. The well-integrated tannins allow the red and black fruit jams to express themselves before giving us flavors of bitter chocolate and a peppery finish. A fresh wine whose drinkability will warm your elbow.

Pairing: Tuna and tomato pie

Aging: Up to 3 years

Alcohol : 12.5% Vol.

Culture : The entire estate is cultivated organically and biodynamically. The soils, very sandy and draining, are of granitic origin. They are very suitable for Gamay Saint-Romain. Fertilization is done only with compost from their cattle breeding. The harvest is harvested manually, which allows us to refine the sorting and thus to vinify irreproachable grapes.

Vinification: The grapes are vatted 50% destemmed, without sulphiting with a maceration of 7 days and the fermentation begins thanks to the native yeasts of the grape with some pumping over. Aged for 5 to 8 months in concrete vats

For the little story : Located in the town of Villemontais, the estate covers 21 Ha. As soon as he arrived in 2005, Romain refurbished the cellar, converted the vineyard to organic farming
