Winemaker: Jean-Christophe Comor

Grapes: Cinsault

Characteristics: Dense, fruity and fresh, the magnums of Jean-Christophe Comor continue to enchant us

Pairing: Feta pepper cake, Milanese cutlet.

Aging: Between 2 and 5 years

Alcohol: 13% Vol.

Cultivation: From his first vintage, Jean-Christophe opted for organic viticulture in the movement of natural wines. Here, it is old vines of Cinsault with a very low yield (20h/h) which are used to make only magnums in very small production. Planted on massive clay-limestone soils of Sainte Baume located at an altitude of 400m.

Vinification: The wines are very low in sulfur and, of course, industrial or acid yeasts are banned from the open-air cellar.

For the record: The vineyard of just over 10 hectares is divided into two appellations: Coteaux Varois en Provence and Bandol.
