Wineùakers: Christian, Sarah and Simon Giacometti

 

Grapes: 1/3 Niellucciu, 1/3 Sciaccarellu and 1/3 Grenache

 

Features : The nose offers a very nice intensity on a particularly mineral aspect with aromas of humus, earth and wet stone, revealing a complexity mixing red cherry, fennel and anise, with a very slight reduction as we like them ;) On the palate it is above all the structure that speaks with a nice acidity and very present tannins. Despite an assertive body, the flavors of red cherry, gooseberry and wet stone make it a wine with a very high degree of drinkability.

 

Pairing: Grilled lamb chops

 

Aging: Between 2 and 5 years

 

Alcohol : 13% Vol.

 

Culture : 32 hectares of clay-granitic soil converted to organic farming since 2017. Harvesting is done manually.

 

Vinification: In the cellar, it is nature that operates and causes the juices to ferment. No chemicals added in the estate's winemaking process. Crushing, destemming during vatting. Co-fermentation of the three grape varieties with natural start in fermentation. Maceration for 12 days with slight pumping over. Devatting by gravity, pressing and assembly of the juices. Aged for 8 months on the lees in stainless steel vats. Without inputs other than a moderate dose of SO2 < 40mg/L. No filtration and of course no sticking.

 

For the little story : The vines are located in the heart of the Agriates desert, a particularly arid region, at the western end of the Patrimonio appellation
