Grapes: Sciaccarellu

 

Features : Happiness is transmitted in the glass! An intense nose with very bloody, saline and iodized aromas, accompanying a nice blackcurrant, black cherry and a gourmet dark chocolate. On the palate, it's not quite dry, but very fresh and drinkable. Although the tannins assert themselves and persist, the sips are only velvet. Superb aromatic intensity on an expressive saline terroir, dark and light notes of black and red cherry, strawberry, blackcurrant, dark chocolate and black pepper.

 

Pairing: Friends, laughter and another bottle!

 

Aging: Between 2 and 5 years

 

Alcohol :14.5% Vol.

 

Culture : 32 hectares of clay-granitic soil converted to organic farming since 2017. Harvesting is done manually.

 

Vinification: In the cellar, it is nature that operates and causes the juices to ferment. No chemicals added in the estate's winemaking process. Destemming during vatting. Natural start in fermentation in stainless steel vats. Natural start in fermentation in stainless steel vats. Maceration for 10 days with light pumping over. Devatting by gravity. Pressing and assembly of the juices. After malolactic fermentation, aging on fine lees for 10 months in stainless steel vats. Without inputs other than a moderate dosage of SO2 <30mg/L. Unfiltered, unfined wine.
