Grapes: Gamay
Features : Floral nose, scents of faded roses, iris, strawberries. On the palate, this cuvée offers a fruity attack, we perceive notes of wild strawberries, a subtle floral note and a hint of spice. Flattering wine on the palate, full-bodied but velvety.
Aging : Between 4 and 6 years
Alcohol : 13.5% Vol.
Culture : Manual harvest in boxes of 25 kg. They are stored overnight in a cold room while awaiting vatting the following morning. Soil: granitic
Vinification: Cold carbonic maceration in whole bunches without SO2 with indigenous yeasts for a fortnight. Manual devatting followed by pressing on a vertical wooden press. Aged on fine lees, without SO2, in 228 liter barrels for 8 to 12 months. Only the bottom of the barrels is filtered on a cellulose plate, i.e. around 5% of the total.
For the little story : Christophe founded the estate with his famous uncle, dear Marcel Lapierre. We take the time, give it a little decanter and serve it chilled.
