Grapes: Gamay

 

Characteristics: On the nose, delicate notes of blueberry, blackberry, plum. Delicious and joyful wine. Full-bodied with moderation, "drink en primeur but age well"

 

Aging: Between 5 and 10 years

 

Alcohol: 14% Vol.

 

Cultivation: On rock of volcanic origin, the famous “blue stone” of the Côte de Brouilly (metatuf and metadiorite). Manual harvest in boxes of 25 kg. They are stored overnight in a cold room while awaiting vatting the next morning.

 

Vinification: Cold carbonic maceration in whole bunches without SO2 with indigenous yeasts for a fortnight. Manual devatting followed by pressing on a vertical wooden press. Aging on fine lees, without SO2, in 228 liter barrels for 6 to 9 months. Only the bottom of the barrels is filtered on a cellulose plate, i.e. around 5% of the total.
