Grapes: Chardonnay, Chenin and Mauzac
Characteristics: On the nose, a floral wine (apple blossom, white flower), slightly woody (acacia, freshly cut wood) and combining the freshness of grapefruit and the delicacy of apple juice. On the palate, the fine but lively bubbles accompany the floral and herbaceous aromas and reveal notes of calva, apple compote and bitter almond over a very nice length. A fresh and tasty wine.
Pairing: A gastronomic wine to accompany a tartar of salmon with fennel or simply Comté
Aging: between 2 and 5 years
Alcohol: 12.5% Vol.
Cultivation: Organic farming since 2000. Soils: clay and sandstone
Vinification: Vinification and aging on lees for 9 months. Aging on slats for 24 months. Not dosed. Total SO2 < 30mg/L
For the record: Gilles Azam bought his first vineyard in 2000, then patiently laid down each milestone of this 13-hectare estate.
