Grapes: Shiraz

 

Features : Perfection is therefore Corsica! An intense nose of chocolate, brandied cherries, prunes, slightly smoky with notes of typically Mediterranean maquis and saline. On the palate, the desert terroir gives birth to paradise: powerful but already nicely integrated tannins opening onto aromas of herb de Provence, oregano, prunes, tobacco and a light vanilla finish softening the complex aromatic palette.

Aging: Between 4 and 6 years

 

Alcohol : 14% Vol.

 

Culture : 32 hectares of clay-granitic soil converted to organic farming since 2017. Harvesting is done manually.

 

Vinification: In the cellar, it is nature that operates and causes the juices to ferment. No chemicals added in the estate's winemaking process. Crushing, destemming during vatting. Natural start in fermentation. 12-day maceration with light remontage. Devatting by gravity, pressing and assembly of the juices. Casing in demi-muid after malolactic fermentation. Aging on lees for 12 months in demi-muid then mass aging in stainless steel vats for 10 months before bottling. Without inputs other than a moderate dosage of SO2 <40mg/L. Unfiltered and unfined wine.

 

For the little story : Located in the heart of the Agriates desert, a particularly arid region, at the western end of the Patrimonio appellation.
