Characteristics: The nose takes us on a journey with its notes of kumquat, arbutus, mandarin, red apple, exotic fruits, maquis, yoghurt and spices. "Les Agudes" comes from the Latin accutus meaning "spicy" in Catalan, it is this very spicy particularity that we find in the mouth: chilli, white pepper, fennel seeds, ginger and a particularly present salinity, but also unusual flavors of lemon wine and kumquat. Although dry, its body is fat and its texture buttery, making this extraordinary wine a delicacy that can explore the spices of gastronomy.
Pairing: Braised vegetables with orange, oriental dishes with spices
Aging: Between 3 and 5 years
Alcohol: 13% Vol.
Cultivation: Bio-dynamic agriculture since 2011, manual harvesting on vines with an average age of 20 years
Vinification: Direct destemmed and whole bunch pressing, fermentation in stainless steel vats and barrels, Fermentation in tuns. Aged in stainless steel vats, barrels and tuns for 6 months. Total SO2 < 30mg
