Winemaker: Sébastien Brunet

 

Grapes: Chenin

 

Characteristics: A generous, fresh and fruity nose with citrus notes. The bubbles are of rare finesse, they attack the palate with lightness and elegance. Its buttery and brioche aromas accompany its good length.

 

Pairing: Salmon tartare, scallops

 

Aging: Up to 5 years

 

Alcohol: 13.5% Vol.

 

Cultivation: Organic farming seemed obvious, all the vines are worked without weed killers or pesticides, including these thirty-year-old Chenins. The flint clay soils are worked mechanically and the grapes are harvested by hand.

 

Vinification: All vinification is done as naturally as possible, this ancestral method is no exception. This wine is vinified and aged 80% in stainless steel vats and 20% in 225L barrels, with its native yeasts and aging on slats for a minimum of 12 months. Reasonably sulphited at bottling. Total SO2<30mg/L

 

For the record: Sébastien started in 2007 by taking over his father's vines and buying an old mushroom farm from the 16th century in order to age his wines in galleries of Tuffeau. Gradually the estate grew to about fifteen hectares today in the Vouvray appellation spread over the communes of Vernou and Reugny.
