Grapes: Muscat à petits grains

 

Characteristics: The cuvées are a reflection of Stéphanie's personality, a lot of energy, attentiveness, anchoring in her terroir, a beautiful liveliness and great generosity. On the nose, the gluttony and the lemony aromas, jammy bergamot explode, accompanied by a beautiful floral freshness on the honeysuckle. Unlike the vast majority of Muscats from the region, this one is dry, but it does not lose its pronounced intensity on flavors of lemon leaf, orange blossom and kumquat. The finish is extremely long and fresh.

 

Pairing: Pan-fried scallops with a kumquat zest sauce

 

Aging: 3 to 6 years

 

Alcohol: 13.5% Vol.

 

Cultivation: Stéphanie took over the vineyard from her grandparents in 2004. Her 8 hectares of vines – including 1 ha of Muscat, 5 ha of Niellucciu and 2 ha of Vermentino – are grown organically and the harvest is manual. "No pesticides touch our vines, and no yeast is used in the composition of our wines"

 

Vinification: In the cellar, it is nature that operates and causes the juices to ferment. No chemicals added in the estate's winemaking process. Manual harvesting, fermentation and aging in stainless steel vats, 0 filtration, <35 mg/L total S02

 

For the little story: Ghjasippina is the name of Stephanie's hen ;)
