Grapes: Niellucciu

 

Features : The nose already puts us on the right track with a very nice intensity, a real bomb of red fruits! There is also a nice freshness on aromas of undergrowth and mushrooms. At the palate, we are simply delighted by sa gluttony. Its lightness and very discreet tannins give way to flavors of crushed strawberries and grenadine. A wine of thirst, the bottle once opened the level will unfortunately drop too quickly...

 

Pairing : Chorizo, Lonzu and other appetizer delights

 

Aging : Between 2 and 4 years

 

Alcohol : 14% Vol.

 

Culture : Stéphanie took over the vineyard from her grandparents in 2004. Its 8 hectares of vines – including 1 ha of Muscat, 5 ha of Niellucciu and 2 ha of Vermentino – are grown organically and the harvest is manual. . "No pesticides touch our vines, and no yeast is used in the composition of our wines"

 

Vinification: In the cellar, it is nature that operates and causes the juices to ferment. No chemicals added in the estate's winemaking process. Quick pressing with light filtration and without sticking and a very moderate addition of SO2 for a total of 25mg including 12mg of free.

 

For the little story : The cuvée reflect Stéphanie's personality, a lot of energy, listening, anchoring in her terroir, a beautiful liveliness and great generosity
